I own a 1966 C10 with a 327 that will stall when I accelerate too quickly, either from a stop or while driving down the road.
If I accelerate very, very slowly it runs fine.
Could this be a carb or timing issue?

Yes it could be either or both. Check timing first then make sure your secondaries are operating properly when you go wide open throttle.

If none of those work check the fuel pressure at the carb - possible kink or restriction of the fuel line starving the carb.
